LOW CARB SALAD IDEA WITH SUNDRIED TOMATO & WALNUT DRESSING via ShredHappens #lowcarb #keto #shorts


SUNDRIED TOMATO & WALNUT DRESSING . This salad is everything, but the dressing in particular is something special. If you like a lemony, sundried tomato-y, walnut-y mouth party, I think you’ll really enjoy this. It’s so good I couldn’t stop tasting it. . I used red cabbage as the main base, but feel free to use green cabbage, lettuce, baby kale, or whatever base you’d prefer. Just make sure it’s finely chopped. . Here’s how I made it - starting with the dressing: . 1. First, the dressing: I juiced 2 large lemons (this yielded me 1/2 cup fresh juice) and added it to a high powdered blender along with 1/4 cup EVOO olive oil, 2 garlic cloves, small shallot, handful fresh basil, couple pinches sea salt, fresh ground pepper, 10 sun-dried tomatoes that are jarred/marinated in olive oil, and 1/4 cup roasted walnuts. The tomatos need to be the ones in olive oil for the appropriate flavor profile 😊 . 2. Give this a super good pulse/blend until nice and creamy and no chunks. Give it a finger taste test and see if you want to adjust by adding anything. This is a little lemony so if you want to add more tomatoes or walnuts to balance it out, feel free to do so! . 3. For the salad, I used 1/2 finely chopped red/purple cabbage, 3 finely chopped Persian cucumbers, handful of quartered cherry tomatoes, 1/2 a shallot finely sliced, and a handful of fresh finely chopped mint. Feel free to sub mint for another favorite fresh herb if you’d like. Tarragon or garlic chive would be an excellent choice. . 4. Toss everything together, taste, and optional, add crumbled feta, more walnuts, and/or even balsamic glaze on top. . 5. Enjoy as is, or use your favorite lowcarb cracker (@califlourfoods makes a great lowcarb one cracker) a lowcarb chip (@hilolifesnacks is where it’s at!), or just devour straight up! .
