Melt butter in a large skillet over medium-high heat. Add onions and cook, stirring, until translucent, about 2 minutes. Add celery and garlic and cook for another minute. Reduce heat to medium-low and add flour. Cook, stirring, for another minute. Slowly stir in the chicken broth and milk. Season with thyme, sage, salt and pepper. Stir in turkey and frozen peas and carrots. Cook until heated through. Transfer filling to an oven-safe baking dish and top with puff pastry and brush with egg wash. Cut a few holes in the top of the pie to allow steam to escape. Bake until puff pastry has risen and is golden brown, about 25-30 minutes. Enjoy! Turkey Brie Cranberry Kale Salad 3 tbsp cranberry sauce http://bit.ly/2zNp2d6 3 tbsp olive oil + 1 tsp to massage kale 2 tbsp balsamic vinegar 6 cups chopped kale 1 cup leftover cooked turkey, chopped or shredded ¼ cup dried cranberries ½ cup sliced brie ¼ cup sliced almonds Salt and pepper to taste To make vinaigrette, in a small bowl, whisk together olive oil, balsamic vinegar and cranberry sauce. If your cranberry sauce is a little thick, thin it out with a splash of water or orange juice. Set aside. To assemble your salad, massage the kale with a drizzle of olive oil. Top salad with turkey, dried cranberries, brie slices and almonds. Drizzle over vinaigrette before serving. Enjoy! Thanksgiving Quiche 1 pre made frozen pie crust 1 cup leftover cooked turkey, chopped or shredded ½ cup grated swiss cheese 3 green onions, thinly sliced 4 eggs ½ cup milk or cream ⅛ tsp grated nutmeg Salt and pepper to taste Preheat oven to 375ºF. Place pie crust onto a baking sheet. In a large bowl, mix together turkey, swiss cheese and green onions and transfer to pie crust. In a large bowl, whisk together eggs, milk, nutmeg and salt & pepper to taste. Pour egg mixture into the pie crust and fill to the top. Bake until egg mixture has set and top is lightly golden, about 25-30 minutes. Enjoy! *SOME links provided above are affiliate links
