In a large bowl, massage the kale with half of the vinaigrette. Toss with the rice and transfer to a serving dish. Top with the apple, grapes, cherries, almonds and remaining vinaigrette. Enjoy! Spicy Sausage & Potato Soup 1 tablespoon olive oil 1 onion, finely diced 2 garlic cloves, minced 1lb hot Italian sausage, removed from its casing 5 cups chopped kale 3 cups diced potatoes 1 1/2 cup diced tomatoes 1/4 teaspoon red pepper flakes 8 cups chicken broth Salt and freshly cracked black pepper Heat the oil in a large Dutch oven over medium-high heat. Add the onion and cook until it is translucent, 2 to 3 minutes. Add the garlic and cook until fragrant. Add the hot Italian sausage and cook, breaking it up with the side of your spoon, until it’s no longer pink, 6 to 8 minutes. Add the kale and potatoes and cook for a minute and top with the diced tomatoes, red pepper flakes and broth. Bring the soup to a boil and reduce to a simmer. Simmer until the potatoes have softened, about 25 to 30 minutes. Season with salt and pepper to taste. Enjoy! Soba Noodle Bowl 1 tablespoon sesame oil 1 cup sliced mushrooms 2 garlic cloves, minced 1 teaspoon freshly grated ginger 1/2 teaspoon red pepper flakes 4 cups chopped kale 3 cups cooked soba noodles 2 tablespoons soy sauce 2 tablespoons rice vinegar 1 tablespoon agave 2 green onions, thinly sliced 1/4 cup chopped cilantro Salt and freshly cracked black pepper Cook soba noodles according to package directions and set aside. Heat the sesame oil in a large skillet over medium-high heat. Add the mushrooms and cook until they begin to brown, about 4 to 5 minutes. Add the garlic, ginger and chili flakes and cook until fragrant. Add the kale and cook until it wilts, about 2 to 3 minutes. Add the cooked soba noodles and season with soy sauce, rice vinegar and agave. Cook until the noodles have heated through and stir in the green onion and cilantro.
