Add the chicken, season with salt and pepper, and cook until it is golden on all sides, 10 to 12 minutes. Once golden, remove the chicken from the skillet and set it aside. Add the butter to the skillet and the onion and pepper. Cook until they begin to soften, 3 to 4 minutes. Stir in the garlic and flour and cook for another minute. Slowly stir in the chicken broth and paprika. Season the mixture with salt and pepper to taste. Bring the mixture to a simmer and return the chicken to the pan. Continue to cook until the chicken has reached an internal temperature of 165ºF. Once cooked, stir in the sour cream. Serve immediately with cooked egg noodles, sour cream and chopped parsley. Coconut Lime Chicken 1 tablespoon coconut oil 4 boneless skinless chicken breasts 1 yellow onion, thinly sliced 2 garlic cloves, minced 1 chili, thinly sliced 1 14-ounce can coconut milk 2 tablespoons honey 1 cup snap peas 2 limes, zest and juice Salt and freshly cracked black pepper In a skillet, melt the coconut oil over medium-high heat. Season the chicken with salt and pepper to taste and arrange it in the skillet. Cook until it is brown, about 5 to 7 minutes. Flip the chicken and continue to cook until the remaining side is brown, about 4 minutes. Once brown, remove the chicken from the skillet and set it aside. Add the onion to the skillet and cook it until it softens, about 3 to 5 minutes. Add the garlic and chili and cook until it is fragrant, 30 seconds. Add the coconut milk, honey, lime zest, and lime juice to the skillet and return the chicken to the pan. Cover the skillet and bring the mixture to a simmer. Continue to cook the chicken until it reaches an internal temperature of 165ºF. Stir in the snap peas and cook until they are tender-crisp, about 2 minutes. Serve immediately with some cooked rice or store in the refrigerator for up to 3 days. Roast Chicken with Blue Cheese Cream Sauce 4 chicken breasts 1 teaspoon garlic powder 1 teaspoon chopped fresh rosemary 3 tablespoon butter 2 garlic cloves, minced 8 cups baby spinach, chopped 1 tablespoon flour 1 cup chicken broth 1/2 cup crumbled blue cheese 1 teaspoon fresh thyme leaves Salt and freshly ground black pepper Preheat the oven to 375ºF. Line a baking sheet with parchment paper. Arrange the chicken on the baking sheet and season it with the garlic powder, rosemary, salt, and pepper. Bake the chicken until it is golden and reaches an internal temperature of 165ºF, about 40 minutes depending on the size of the chicken. Meanwhile, in a skillet, melt 1 tablespoon of butter over medium-high heat. Add the garlic and cook until it is fragrant, about 30 seconds. Stir in the spinach, one handful at a time. Cook until it has wilted completely, about 2 to 3 minutes. Season the spinach with salt and pepper to taste and set it aside. Just before serving, in a saucepan, melt the remaining butter over medium heat. Whisk in the flour and cook for about 30 seconds. While whisking, slowly pour in the broth. Continue to cook, constantly whisking, until the milk begins to thicken. Whisk in the blue cheese, thyme, and black pepper. Cook until the cheese has completely melted. Add the onions, pepper, and mushrooms. Stir in the broccoli and carrots. Cook until they begin to soften, about 2 minutes. Stir in the garlic and ginger and cook until they become fragrant, about 30 seconds. Stir in the tamari and agave. Stir in the noodles. Continue to cook until the noodles have heated through. Serve immediately or store in the refrigerator for up to 5 days. Roasted Veggie Tacos 1 sweet potato, peeled and diced 1 red pepper, diced 1 green pepper, diced 1 red onion, diced 1 tablespoon vegetable oil 1 tablespoon chili powder 1 teaspoon ground cumin 1 cup canned black beans, rinsed and drained 1 cup corn kernels Zest and juice of 1 lime Tortillas for serving 1/2 cup salsa verde for serving Cilantro for serving Lime wedges for serving Salt and freshly ground black pepper Preheat the oven to 375ºF. Arrange the sweet potato, peppers, and onion on a parchment-lined baking sheet. Drizzle the vegetables with the oil and season with the chili powder, cumin, salt and pepper. Bake the vegetables until they begin to soften and brown, about 20 to 25 minutes. Stir in the black beans, corn, and lime juice. Return the vegetables to the oven and continue to bake for another 5 minutes, or until the beans have heated through. Assemble the tacos by filling the tortillas with the roasted vegetables. Top with the cotija, cilantro and serve with lime wedges. Serve immediately or store in the refrigerator unassembled for up to 3 days. Black Pepper Tofu 1/4 cup soy sauce 1/4 cup vegetable broth 2 garlic cloves, minced 1 tablespoon agave 1/2 teaspoon freshly grated ginger 1 tablespoon coarsely ground black pepper 1 extra firm tofu brick, sliced 1/2 teaspoon cornstarch 1 tablespoon sesame oil 1/2 cup roughly chopped green onions Edamame & Snap Pea Salad: http://bit.ly/2xLy5dX In a small bowl, whisk together the soy sauce, vegetable broth, garlic, agave, and ginger. Set it aside. In a large skillet, heat the sesame oil over medium-high heat and cook the tofu until it is brown on all sides, 4 to 5 minutes. Add the soy sauce mixture and continue to cook until the sauce thickens, 1 to 2 minutes. Season the tofu with the black pepper. What I Eat in a Day || Plant Based Vegan || Steph and Adam


What I Eat in a Day is the most requested thing on the Steph and Adam Youtube Channel! Since announcing that we follow a Plant Based Diet / Vegan Diet you are all very curious as to what I eat in a day. If you have been following our journey you would know that Adam is on a Weight Cut. That means that each week for 12 weeks, he tracks his macros and calories into an app called LIFESUM. As this is Adam's 9th week of cutting weight, his calories are much lower then the average person should be eating. We recommend you follow the Lifesum apps recommendations as it will calculate your calories and macros for your specific goal. If you don't want to lose weight that is totally fine. We understand that not everyone needs to lose weight. But you can use the app for many health goals, like gaining weight, bulking or simply staying on track and creating healthy habits. Add the onion and red pepper and cook until they begin to soften, about 3 minutes. Stir in the carrots and cook until they begin to soften, about 2 minutes. Stir in the shrimp and cook until they turn pink, about 3 minutes. Stir in the garlic and ginger and cook until they become fragrant, about 1 minute. Add the noodles, snow peas, soy sauce, fish sauce, agave, curry powder, and turmeric. Mix everything together and allow the soy sauce to reduce, about 1 minute. Serve immediately topped with the green onions or store in the refrigerator for up to 3 days. Thai Basil Beef Bowls 1/4 cup soy sauce 1 tablespoon fish sauce 1 tablespoon oyster sauce 1 teaspoon chili garlic sauce 1 teaspoon honey 1 teaspoon cornstarch 1 tablespoon sesame oil 2 cups sliced steak 1 yellow onion, thinly sliced 1 red pepper, thinly sliced 1 green pepper, thinly sliced 3 garlic cloves, thinly sliced 1 teaspoon grated fresh ginger 1 cup Thai basil 4 cups cooked white rice Sesame seeds for garnish Salt and freshly ground black pepper" In a small bowl, whisk together the soy sauce, fish sauce, oyster sauce, chili garlic sauce, honey, and cornstarch. In a large skillet, heat the oil over medium-high heat. Add the beef to the skillet and cook, stirring, until it is almost cooked through, about 2 minutes. Add the onion, red pepper and green pepper to the skillet. Cook, stirring occasionally until they begin to soften, about 3 minutes. Add the garlic and ginger and cook until it becomes fragrant, about 30 seconds. Add the sauce to the skillet and cook until it begins to thicken, about 1 minute. Stir in the basil leaves and cook until they have wilted, about 1 minute. Serve the beef immediately over a bowl of cooked rice or store in the refrigerator for up to 3 days. Spring Roll Stir Fry 1/4 cup soy sauce 1 tablespoon hoisin sauce 1 teaspoon agave 3 garlic cloves, minced 1 teaspoon grated fresh ginger 1 tablespoon sesame oil 2 cups sliced mushrooms 1 yellow onion, finely sliced 1 cup shredded green cabbage 1/2 cup julienned carrots 1 brick extra firm tofu, crumbled 3 cups cooked rice noodles 1/4 cup sliced green onions Sesame seeds for garnish In a small bowl, whisk together the soy sauce, hoisin sauce, agave, garlic and ginger. Set it aside. In a large skillet, heat the oil over medium-high heat. Stir in the onions and mushrooms and cook until they soften, about 3 minutes. Stir in the cabbage and carrots and cook until they begin to soften, about 2 minutes. Add the tofu, noodles and sauce. Mix everything together well. I've Lost 15 lbs in 9 weeks on a High Carb Plant Based Diet. Most people would tell you that is impossible and the best diet for fat loss or weight loss is KETO but you can loss weight on ANY diet. It all has to do with Calories IN Calories OUT. If you eat less calories than your body needs in a day you will lose weight. If you eat more calories than you need in a day you will gain weight. If you eat the right amount of calories for your body each day you will maintain your weight. In 9 weeks I have loss 15 lbs of total weight and have lost 8.8 lbs of fat. All on a high carb diet plant based diet. "Carbs make you Fat" is what everybody in the media is saying and advertising. It's all rubbish. Season the chicken liberally with salt and pepper. Fry the chicken, skin side down, until the skin is golden and releases easily from the skillet, about 6 minutes. Flip the chicken over and continue to cook until it releases easily from the pan. Remove the chicken and set it aside. Add the peppers and shallot to the pan and cook until they have softened, about 2 to 3 minutes. Stir in the beans and pesto. Cook until the beans have heated through. Return the chicken to the skillet and continue to cook, covered, until it reaches an internal temperature of 165ºF, about 5 minutes. Add a splash of water if the mixture is too dry. Serve the chicken immediately on top of the bean mixture or store in the refrigerator for up to 3 days. Mushroom Orecchiette 1 pound dried orecchiette 1/4 cup butter 4 cups chopped mushrooms 5 garlic cloves, minced 3 tablespoons chopped fresh parsley Salt and freshly cracked black pepper In a large pot of salted boiling water, add the pasta. Cook, stirring occasionally, according to package instructions. Be sure to reserve some of the pasta water before draining. Meanwhile, in a large Dutch oven or pot, melt the butter over medium-high heat. Add the mushrooms and season them with salt and pepper to taste. Cook the mushrooms until they have released their moisture and begin to brown, about 5 minutes. Stir in the garlic and cook until it is fragrant, about 30 seconds. Stir in a couple of ladles full of the pasta water. Add the pasta to the skillet and cook until it is heated through. Once heated, Stir in the parsley. Serve immediately or store in the refrigerator for up to 3 days. Shrimp & Snap Peas 3 tablespoons miso paste 1/4 cup water 1 pound peeled shrimp 4 garlic cloves 1 teaspoon grated fresh ginger 2 cups snap peas In a small bowl, whisk together the miso paste and water until smooth. In a large skillet, heat the oil over medium-high heat. Add the shrimp and cook until it begins to turn pink, about 2 minutes. Stir in the garlic and ginger and cook until they become fragrant, 30 seconds. Stir in the miso sauce and the snap peas. Continue to cook, stirring until the shrimp is cooked through and the snap peas are tender crisp, about 1 minute. This is our Gender Reveal for our first baby! We decided to have a Baseball Gender Reveal as Adam plays cricket and Steph played softball. Adam really wanted to hit the baseball with a cricket bat because he is Australian and played cricket all his life... but trying to find a bat in America isn't that easy! Add the chicken and season it salt and pepper. Cook until the chicken is no longer pink, 3 to 4 minutes. Add the onion and cook for another 3 minutes, or until the chicken begins to brown and the onions begin to soften. Add the garlic and cook until it becomes fragrant, 30 seconds. Add the pasta, broth and milk. Bring the mixture to a boil and reduce to a simmer. Cook, covered, stirring frequently for 10 minutes, or until the pasta begins to soften. Stir in the broccoli. Cook for another 2 to 5 minutes, or until all of the liquid has been absorbed. Stir in the cheddar cheese, red pepper flakes, and nutmeg. Serve immediately. Bloody Mary One Pot Pasta 2 teaspoons olive oil 1 small yellow onion, finely sliced 1/2 cup finely sliced celery 2 garlic cloves, minced 1 tablespoon Worcestershire sauce 1 teaspoon prepared horseradish 1 teaspoon tabasco 1 pound spaghetti 2 cup strained tomatoes 4 cups vegetable broth 1 lemon, zest and juice Celery salt and freshly ground black pepper Celery leaves for garnish Heat the oil in a large pot or Dutch oven over medium-high heat. Add the onion and celery and cook until the onions become translucent, 2 to 3 minutes. Add the garlic, Worcestershire sauce, horseradish, and tabasco. Cook until they become fragrant, another 30 seconds. Add pasta and tomatoes and bring the mixture to a boil. Cook, covered for 12 to 15 minutes or until all of the liquid has been absorbed. Stir often so the pasta doesn’t stick. Stir in the celery salt and lemon juice. Serve immediately topped with celery leaves. One Pot Beef Stroganoff 1 tablespoon vegetable oil 2 cups thinly sliced beef chuck 2 tablespoons butter, divided 2 cups quartered mushrooms 1 onion, finely diced 2 garlic cloves, minced 1 tablespoon Worcestershire sauce 1 tablespoon Dijon mustard 1 teaspoon fresh thyme leaves 1 pound egg noodles 3 cups beef broth 1/2 cup sour cream Heat the oil in a large pot or Dutch oven. Add the beef and season it with salt and pepper to taste. Cook the beef, stirring occasionally, until it is cooked through, 3 to 4 minutes. Remove the beef from the pot and add the butter. Add the mushrooms and cook until they begin to soften, another 3 minutes. Add the garlic, Worcestershire sauce, Dijon mustard, and thyme leaves. Cook until they become fragrant, 30 seconds. Stir in the noodles and broth. Once boiling, reduce the heat to a simmer. Cook, covered, stirring often, until the liquid has been absorbed, 7 to 10 minutes. Return the beef to the pot and stir in the sour cream just before serving. Serve immediately topped with fresh parsley. Arrange the bread on a baking sheet and drizzle with 1 tablespoon of olive oil. Season the bread with salt and pepper. Bake until it is golden, about 10 minutes. Once golden, remove it from the oven and allow it to cool completely. In a small bowl, whisk together the remaining oil, vinegar, basil and Dijon. In a large bowl, toss together the toasted bread, lettuce, tomatoes, bacon and vinaigrette. Tuscan Salad 3 tablespoons olive oil 2 tablespoons red wine vinegar 1 teaspoon Dijon mustard 1 teaspoon freshly chopped parsley 3 cups chopped dinosaur kale 1 cups canned white kidney beans, rinsed and drained 1/2 cup sliced roasted red peppers 1/2 cup chopped salami 1/2 cup chopped marinated artichokes 1/4 cup sliced Kalamata olives 1 shallot, finely sliced In a small bowl, whisk together the oil, vinegar, Dijon mustard, parsley and agave. Set it aside. In a large mixing bowl, massage the kale with half of the vinaigrette. Arrange the kale in a serving dish topped with the kidney beans, roasted red peppers, salami and shallots. Pour the dressing over the salad or serve on the side. Rojak Salad 1 tablespoon vegetable oil 1 cup cubed extra firm tofu Zest and juice of 1 lime 2 tablespoon fish sauce 2 tablespoons tamarind paste 1 tablespoon agave 1 teaspoon sambal (optional) 1 teaspoon grated fresh ginger 3 cups baby spinach 1 cup shredded red cabbage 1 cup seeded and sliced cucumber 1 cup diced pineapple 1 cup diced mango 1 tablespoon freshly chopped mint 1/4 cup chopped peanuts Salt and freshly cracked black pepper Heat the oil in a skillet over medium-high heat. Add the tofu to the skillet and season it with salt and pepper to taste. Cook, stirring occasionally until the tofu is golden on all sides, 8 to 10 minutes. Once cooked, remove from the heat and set it aside to cool slightly. In a small bowl, whisk together the lime zest, juice, fish sauce, tamarind paste, coconut sugar, sambal, and ginger. Set it aside. Arrange the spinach, red cabbage, cucumber, pineapple and pineapple in a serving dish. Top with the mint and peanuts. Add the beef and cook, stirring until it begins to brown. Add the red pepper and cook until it begins to soften, about 2 minutes. Stir in the chili garlic sauce, ginger, soy sauce, brown sugar and green onion. Continue to cook until the beef is cooked to your liking and the sauce has thickened. Serve topped with more green onion and sesame seeds. Vegetarian Lo Mein 1 tablespoon sesame oil 1 yellow onion, finely sliced 1 cup sliced mushrooms 1 red pepper, julienned 1/2 cup julienned carrots 1/2 cup shredded green cabbage 1 cup snap peas 3 cups cooked Chinese egg noodles 1/4 cup soy sauce 1 tablespoon agave 3 garlic cloves, minced 1/2 teaspoon freshly ground ginger 1/4 cup sliced green onions for garnish Sesame seeds for garnish Heat the sesame oil in a skillet over medium-high heat. Add the onion, mushrooms, and pepper. Cook, stirring until they begin to soften, about 3 minutes. Stir in the carrots and cabbage and cook until they begin to soften, another 2 minutes. Stir in the snap peas, noodles, soy sauce, agave, garlic, and ginger. Cook for another 1 to 2 minutes, or until the sauce has reduced slightly and the noodles have heated through. Garnish with fresh green onion slices and sesame seeds just before serving. Easy Egg Rolls 1 tablespoon sesame oil 1 pound ground pork 2 cups shredded green cabbage 1 cup bean sprouts 1 cup julienned carrots 3 garlic cloves, minced 1 teaspoon freshly grated ginger 1/4 cup soy sauce 1 tablespoon agave 16 egg roll wrappers 1 teaspoon cornstarch mixed with 1 tablespoon of water 2 tablespoons vegetable oil Heat the sesame oil in a skillet over medium-high heat. Add the pork and cook until it is cooked through, about 5 to 6 minutes. Add the cabbage, bean sprouts, and carrots. Cook until the vegetables begin to soften, 4 to 6 minutes. Stir in the garlic, ginger, soy sauce, and agave. Cook until soy sauce reduces slightly, about 2 minutes. Remove the mixture from the heat and allow it to cool before handling. Preheat the oven to 375ºF. Line a baking sheet with parchment paper. Remove any excess liquid from the pork and vegetable filling. Spoon 2 to 3 tablespoons of the filling into the centre of the lower half of the egg roll wrapper. Begin to roll the wrappers and fold in the sides. Brush the final corner with the cornstarch mixture and continue to roll up the egg roll. Repeat this process until all of the filling has been used up. Place the egg rolls, seam side down on the baking sheet. Spread half of the alfredo sauce in a large baking dish and set it aside. In a large bowl, combine the ricotta, broccoli, chicken, half of the Parmesan cheese, the garlic, salt and pepper. On each lasagna sheet, spread some of the ricotta mixture and roll it up. Place the roll up into the baking dish, seam side down. Continue rolling until all of the filling is used up. Top the roll ups with the remaining alfredo sauce, mozzarella cheese, and the remaining Parmesan cheese. Bake the roll ups until the cheese begins to brown and the sauce is hot and bubbly, about 20 minutes. Garnish with chopped parsley and red pepper flakes just before serving. Chicken Taco Soup 1 tablespoon vegetable oil 1 yellow onion, finely diced 1 red pepper, finely diced 3 garlic cloves, minced 2 tablespoons taco seasoning 1 (28-ounce) can diced tomatoes 4 cups chicken broth 2 cups shredded rotisserie chicken 1 cup rinsed and drained canned black beans 1 cup corn kernels 2 tablespoons chopped fresh cilantro Sour cream for serving Shredded cheddar cheese for serving Lime wedges for serving Green onion slices for serving Salt and freshly cracked black pepper Heat the oil in a soup pot or Dutch oven over medium-high heat. Add the onion and pepper and cook until they begin to soften, about 2 to 3 minutes. Add the garlic and taco seasoning. Cook until they become fragrant, about 30 seconds. Add the diced tomatoes, broth, chicken, beans and corn. Mix well and season with salt and pepper to taste. Bring the soup to a boil then reduce to a simmer. Simmer for 10 to 15 minutes, or until the soup has reduced slightly. Stir in the cilantro and season it well with salt and pepper to taste. Serve topped with a spoonful of sour cream, cheddar cheese, lime wedges, and chopped green onion. Thai Cashew Chopped Salad Dressing Juice of 1 lime 2 tablespoons soy sauce 2 tablespoon fish sauce 1 tablespoon sesame oil 2 teaspoons agave 1 teaspoon freshly grated ginger Salad 1 cup shredded rotisserie chicken 1 cup finely sliced red cabbage 1 cup julienned carrots 1 red pepper, finely sliced 1 yellow pepper, finely sliced 1 cup shelled edamame 1/2 cup cashews Fresh cilantro for garnish In a small bowl, whisk together the dressing ingredients.
