In a large Dutch oven over high heat, add oil. Add beef and brown on all sides. Transfer beef to a bowl and set aside. Reduce heat to medium-high and add onion, celery and carrots. Cook for 2-3 minutes and add garlic. Cook until fragrant. Add worcestershire sauce, thyme, bay leaf and barley. Cook for 30 seconds and add broth. Bring to a boil and reduce to simmer. Simmer for 35-40 minutes, or until barley is cooked through. Stir in parsley. Enjoy! *SOME links provided above are affiliate links
